A typical entrée from the North of Italy, grilled Polenta is nearly impossible to find in Rome. Since my family comes from Veneto and Trentino (the very north of Italy), there wasn't a single day that Polenta was not on the table. I try to keep the tradition as much as possible and this is one of my favorite recipes.
This recipe is the perfect marriage between the north and south. Much like my marriege too. The best onions you can find come from Tropea (In Calabria, South of Italy) they are naturally sweet and easy to find anywhere in Italy.
For this Recipe you will Need:
- A cube of ready polenta. Sliced.
- Extra Virgin Olive Oil
- Tropea Onions (or Red Onions)
- Grill the sliced polenta in just a little olive oil
- On a separate pan add olive oil and the sliced onions. When they are almost brown add a spoon of sugar and a pinch of salt
IIt's that easy. The onions become crunchy and add so much flavour to the Polenta. IIt's the perfect starter and it's very feeling too.
