Risotto With Red Chicory and Gorgonzola Cheese Recipe

Known in Italian as Risotto al Radicchio e Gorgonzola this is a very common and easy to make dish.

For the Risotto you will need:

  • 250 grams of Arborio Rice
  • 500 ml of Boiling Water
  • 300 grams of red chicory finely cut
  • 100 grams of Gorgonzola cheese
  • 1 red onion finely sliced
  • 150 ml of White Wine
  • Salt & Extra Virgin Olive Oil
  • 50 grams of Parmesan cheese

** Some people use vegetable stock to make Risotto, I personally hate it. I think it gives an artificial flavor.

For the Rice:

Slightly fry the Arborio Rice in the hot Olive Oil, when it's transparent add the boiling water and the white wine (Add the same wine you drink, so good wine!). Sip a Glass while you cook :-) Let it cook for around 20min, or until the water has fully evaporated.

In a Separate Pan:

Fry the onions seasoned with salt in the Olive Oil until golden. Add the finely sliced chicory and cook for 5 minutes. Add the gorgonzola cheese in chunks and let it melt and create a cream.

Add the cooked rice to the sauce. Sprinkle the Parmesan cheese over it. It serves two hungry bellys and It's absolutely Yummmm!
